Recipes - Sambhar



Ingredients

Toor Dal 1 cup, washed
Carrot 1/2, chopped
French beans 1/4 cup chopped
Green chili 2, chopped
Tomato 1, chopped
Ginger 1/2 inch chopped
Coriander leaves, chopped 1 cup
Curry leaves 4 - 5
Onion, chopped
Tamarind (imli) 1 tsp soaked in water and crushed
Water 4-5 cups
Red chili powder to taste
Mustard seeds 1/2 tsp
Turmeric powder 1 /4 tsp
Sambhar Masala 2 tsb
Oil 3 tsp
Sugar 1 tsp


Preparation of Sambhar


  • Pressure cook dal, carrot and french bean.
  • In a pan heat some oil and add chopped chili, curry leaves and mustard seed. Let then crackle a bit.
  • Now add chopped onions and ginger and fry.
  • Then add tomatoes and cook till the tomatoes starts melting.
  • Add turmeric and sambhar masala.
  • Now pour the boiled dal into the pan and let it boil.
  • Add chili powder, sugar and salt to taste.
  • Put off the flame and add tamarind juice to it.
  • Garnish it with coriander leaf.

Recipes - Idli



Ingredients

Rice Rava 2 cups
Urad Dal (Split black gram) 1 cup
Oil 1 Tbsp
Water
Pinch of Baking Powder
Salt to taste

Preparation of Idli

  • Wash rice rava. Soak in water for 3-4 hours.
  • Wash dal. Soak in water for 3-4 hours.
  • Drain all the water from the dal and grind in a grinder to get a fine thick paste.
  • Drain all the water from the rice rava and add rava to the dal paste made above.
  • Mix then and let the batter to stand 8- 10 hours.
  • Add salt to taste (about 1 tsp) and a pinch of baking powder.
  • Mix well.
  • Grease the idli maker plates with the oil and fill with the mixture prepared.
  • Cook for about 10 - 15 minutes.

Recipes - Vegetable Sweet Corn Soup





Ingredients

1/2 cup chopped cabbage
1 cup chopped french beans
1 cup chopped carrots
2 tsp sweet corn (makai ke dane)
3 tbsp cornflour
2 spring onions
1 tbsp butter
2 cloves of garlic minced
1 green chilli chopped
some ginger chopped
some coriander leaves
salt to taste
pepper powder
chilli sauce
soya sauce
tomato sauce
white vinegar
750 ml water
A pinch of ajinomoto( Chinese salt)


Preparation of Vegetable Sweet Corn Soup
  • In a pan melt the butter and add garlic, green chilli and ginger.
  • Now add all the other vegetables and corn. Fry it a bit.
  • Make a paste of cornflour.
  • In another pan warm some water and add the paste of cornflour to it.
  • Cook it for about 5 - 6 minutes till the cornflour is cooked well.
  • Keep stirring it, so that no lumps are formed.
  • Now add the fried vegetable to it.
  • Add salt,pepper and a pinch of Chinese salt to it.
  • Now add few drops of vinegar and other sauce.
  • Let it boil for 2 to 3 minutes
  • Garnish it with spring onions and coriander leaves.

Recipes - Vegetable Manchurian

Ingredients

2 cups grated or minced cabbage and cauliflower
2 cups grated or minced carrots
1 cup minced french beans
1 chopped spring onion
2 chopped green chilies
3-4 minced garlic flakes
2 tbsp corn starch or flour
1 tbsp All Purpose Flour (Maida)
1 tbsp boiled and mashed rice
1 tbsp ginger- garlic paste
Oil for deep frying
1 tbsp Soya Sauce
1 tbs tomato sauce
1 tbs chilli sauce
2- 3 drops of white vinegar
Salt to taste
1 tsp pepper powder
1 tsp sugar
A pinch of ajinomoto( Chinese salt)
Chopped coriander leaves

Preparation of Vegetable Manchurian 


  •   Mix all the vegetables and squeeze the water out from them.
  •   Now in a bowl take the squeezed vegetables and mix ginger-garlic paste, mashed rice, corn flour and All Purpose Flour.
  •    Add some soya sauce and salt to taste.
  •    Make small balls of the mixture .
  •    Heat the oil in a kadhai / pan and deep fry the balls till golden brown, drain and keep aside.
  •    In a pan now, heat some oil and saute garlic, green chilies, sugar and some spring onions.
  •    Now add some water, and then add chilli, soya and tomato sauce.
  •     Put the fried balls into it.
  •     Now add pepper powder, vinegar and ajinomoto.
  •     Cook it for about 2 minutes.
  •     Garnish it with chopped coriander and spring onions.

Tips to put on weight

You would think as you need to put on weight, you can have all junk food. That's the easiest way to put on weight. With junk food you will have only increase in your fat content. You need to regulate your diet in order to put on weight. As you now its tough to loose weight same is the condition to gain weight. In short you require dedication and patience. Plan your diet.

Start taking food which have high caloric value. Lay emphasis on eating food which has high content of protein like beef, chicken, cereals, nuts & dry fruits, soya milk, tofu, pulses, milk, yogurt, cheese, eggs and paneer.

Instead of taking meals thrice a day, increase it 4 to 5 times a day. Add  vegetables, rice, oats, pasta, potatoes, carrots, pumpkin, fruits like banana, yogurt. Add sour cream, sauces and dressings to plain foods and salads. Eat bread with fatty spreads such as avocado, peanut butter and olive oil or canola oil.

Dehydration is the main cause of all disease, so avoid it and drink plenty of water. When you are healthy and disease free you will be able to put on more weight.

You might think exercise is done to loose weight. This is a wrong concept. While doing exercise your body metabolism will increase and you will feel more hungry. So go on for stretch up  and some exercise on regular basis.

You all also try on for some protein supplements, it will help you to put on weight faster.

Last but not the least, take enough rest and sleep. A healthy and sound mind can create a fit and healthy body.
